How do I create notes folder on ipod?????

Hi. I understand the part of enable disk use and dragging file to iTune, BUT HOW THE HECK DO YOU CREATE NOTES FOLDER ON iTUNE?!
I really really need someone's help ASAP!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
